I'm sometimes a "from scratch" baker, and sometime not. This time I was "not". I used Target brand Archer Farms red velvet cupcake and vanilla bean cream cheese frosting mix. (Not a plug, it's just what I used.) I haven't tried them yet, but since I cut the "muffy tops" off the cupcakes before icing them I let chickadee number two try some and her review of them was definitely two thumbs up.
I picked up these adorable cupcake toppers at Marshalls a while back and they were most definitely the inspiration for the these cupcakes! Hip Hop Hooray!
It's so easy to become harried around the holidays, Easter included. We get pulled in all directions, what with making sure that the Easter Bunny arrives on time, as well as making Easter brunch or dinner, going to church services, etc. Even if we're not "hosting" an event we usually end up making something to bring along with us and it's so easy to lose sight of the real reason for the season as they say.

Don't get me wrong. I love Easter bunnies (mainly the chocolate ones!) as much as the next person. But I do believe that for me, Easter should be a time of reflection and gratitude for the ultimate sacrifice that was made for all of us so very long ago. I'm looking forward to doing just that, while meditating on what that really means in my every day life. It should also be a time of celebration for He. Is. Risen!
So I have to say don't ever beat yourself up for not making something from scratch. Time is the greatest gift we have. And I'm not planning on wasting mine by worrying about the fact that I used a boxed cupcake mix for my Easter cupcakes. Yup, that's just how I roll. The day will be spent with family after attending mass and reflecting on the glorious resurrection. How about you?
