Belgian Butter Waffle Caramel Sandwich Cookies: 12 Days of Cookies Blog Hop

Traditional Christmas cookies are always fun to make each year during the holidays. Yet there's nothing wrong with trying to mix things up a bit every now and then! That's why I'm sharing my Belgian butter waffle caramel sandwich cookie recipe with you -- in the hopes that you'll break the mold this year and try some of my favorite homemade cookies of all time!

BELGIAN BUTTER WAFFLE CARAMEL SANDWICH COOKIE RECIPE

Ingredients

4 Tbsp. unsalted butter

1/2 cup packed light brown sugar

1/4 Tsp. ground cinnamon

1/3 cup heavy cream

24 Belgian butter waffle cookies 


Directions 

1. Melt the butter in a medium sized sauce pan over medium-high heat.

2. Add the brown sugar and cinnamon and cook, stirring until the sugar dissolves. 

3. Bring mixture to a boil and stir in the cream.

4. Boil for 2 minutes (the mixture will bubble up into an even light-colored foam). 

5. Transfer the mixture to a bowl. Refrigerate until it's slightly cooled and spreadable, about 30 minutes.

6. Spread half of the cookies with 2 tsp. each of the cooled caramel; top each with another cookie to create your "sandwiches".
