Traditional Christmas cookies are always fun to make each year during the holidays. Yet there's nothing wrong with trying to mix things up a bit every now and then! That's why I'm sharing my Belgian butter waffle caramel sandwich cookie recipe with you -- in the hopes that you'll break the mold this year and try some of my favorite homemade cookies of all time!
These decadent and savory Belgian butter waffle caramel sandwich cookies are so easy to make and are sure to be a big hit with friends, family and coworkers alike. So let's get started!

BELGIAN BUTTER WAFFLE CARAMEL SANDWICH COOKIE RECIPE
Ingredients
4 Tbsp. unsalted butter
1/2 cup packed light brown sugar
(NOTE: I used dark brown sugar because it's what I had on hand; use your
preference -- both work well and taste awesome)
1/4 Tsp. ground cinnamon
1/3 cup heavy cream
24 Belgian butter waffle cookies
Directions
1. Melt the butter in a medium sized sauce pan over medium-high heat.
2. Add the brown sugar and cinnamon and cook, stirring until the sugar dissolves.
3. Bring mixture to a boil and stir in the cream.
4. Boil for 2 minutes. The mixture will bubble up into a light-colored
foam (if using light brown sugar). I used dark brown sugar so mine is a bit
darker.
5. Transfer mixture to a bowl. Refrigerate until it's slightly cooled and spreadable, about 30 minutes.
NOTE: I actually made the caramel sauce in advance and chilled it for almost 24
hours. If you do this, just be sure to take the caramel out of the fridge at
least an hour before you start spreading it on the waffle cookies so that it
has sufficient time to soften.
6. Carefully spread one side of one cookie with 2 tsp. cooled caramel, then top it with another cookie to create your "sandwich." Repeat with the remainder of the cookies.
Makes 12 caramel "sandwiches."
NOTE: The cookies are delicate, so be sure to spread the caramel onto the cookies with a very gentle hand so as not to break them.
You can also substitute ready-made vanilla pizzelle (Italian waffle) cookies in place of the Belgian waffle cookies, but they're even more delicate. On the other hand, the large round pizzelles should fit atop your warm cup of coffee, tea or hot cocoa mug just like original Stroopwafels!
